I grow a few herbs in pots each summer and one of my favorites is lemon thyme. Just brushing against or massaging the leaves releases a wonderful lemony fragrance.
But I don’t plant lemon thyme just to rile it up. I like to use the herb in any recipes that call for thyme. Lemon thyme adds a little more brightness than English thyme.
Some winters my plants survive—even though they are exposed in pots, but this winter was too harsh and I had to get replacement plants.
I keep “petting” them for that burst of lemon. I’m sure they can’t wait until they are tucked into pots away from my prying hands.
